We love whole grains! We have found that we prefer their flavor. They are also far healthier than the refined foods which characterize the typical modern diet.

Switching to whole grains helps maintain a low glycemic diet. That means you will have more sustainable energy levels throughout the day, and probably fewer problems with weight control.

We created this website with one goal: to build an online community of like-minded people who either share our enthusiasm about whole grains or just want to learn more about them.

This is a recipe I have come up with for steel cut oatmeal, walnut and date cookies. They are made with applesause instead of oil or butter and I use whole grain flour. They also are made with either raw sugar (very little) or brown sugar Splenda, depending on your personal preference. Everyone that has tried them loves them and they are so healthy.



Healthy Steel Cut Oatmeal Cookies

Ingredients:

  • 1 cup raw turbinado sugar (OR 1/2 cup brown sugar Splenda)
  • 1 cup eggbeaters (OR 4 eggs)
  • 2 cups applesauce (OR 1 ½ cups butter)
  • 2 tsp. vanilla
  • 3 cups whole grain flour
  • 4 cups Steel cut Oats
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 4 heaping tsp. cinnamon
  • 1 cup chopped walnuts
  • 1 1/2 cups chopped dates, raisins, craisins, choc. chips or diced apples

Preparation:

  1. Preheat the oven to 375 degrees
  2. No mixer needed! Just a big spoon or spatula!
  3. Mix applesauce, eggbeaters, vanilla and sugar together in bowl to dissolve sugar.
  4. Add dry ingredients. Stir in dates or raisins etc, and nuts.
  5. Spray cookie sheets with non-stick spray.
  6. Drop by spoonfuls on cookie sheets and bake 15 minutes at 375 degrees.
  7. Cool and store in zip lock or air-tight container.
  8. Refrigerate or Freeze for longer storage.

I just made these and they are SO GOOD! They do have a bit of a crunch to them due to the cut of the oats, but it evens out with the other ingredients which create a chewy consistency. It's amazing how easy these are! With prep and bake time, it only took me 45 minutes. I also have a small kitchen and no mixer, so this is an awesome cookie recipe to make for me. I made a half batch, and it yielded 18 large chunky cookies. For future times (and possibly for other curious bakers perusing this page) is it okay to use regular sugar or even regular brown sugar in place of the turbinado? I realize this takes away from the nutritional point of the recipe, but will such a substitute harm the recipe?

These cookies were amazing. I used half applesauce and half butter. I did normal sugar and for the flour I used 2 cups white and 1 cup whole wheat. I also used dried cranberries as the fruit. It yielded 6 dozen small cookies.

I got the following as my nutrition break down, for a serving of 2 small cookies: 186 calories, 6 g fat, 30 g carbohydrate, 3 g fiber, 4.5 g protein

You can also substitute 1T soy flour and 2-3T water for an egg. I do this all the time in baking and no one ever knows the difference, and it's cheap!

I made these cookies; followed the recipe as it read using brown sugar Splenda, 4 eggs, and 2 cups applesauce. I used Arrowhead Mills' Organic Steel Cut Oats. They came out amazing! I baked them 10 minutes (not 15 as the recipe suggested). I will definitely make these again and again. It make around 60 cookies and I store them in a zip lock plastic back, it keeps them soft and chewy. Fantastic recipe !!!

I made this recipe as it read for the first time and they came out great. close to 70 cookies made so i may cut this recipe in half. I will make again.

MY HUSBAND (AGE 82), SAID THAT HIS MOTHER USED TO MAKE "THE BEST EVER" OATMEAL COOKIES OUT OF LEFT-
OVER "COOKED" STEEL CUT OATMEAL FROM BREAKFAST.
THEY LIVED IN OHIO, WHERE THEY GREW THEIR OWN OATS.
THE COOKIES WERE ALWAYS VERY MOIST & NOT AT ALL
HARD TO CHEW AS SOME HAVE DESCRIBED HERE.
DOES ANYONE HAVE A RECIPE USING "COOKED STEEL-CUT
OATS? HOW ABOUT LINDA A.?
